Elevate breakfast with brown sugar broiled peaches.  A quick trip in the oven or under the broiler cooks the fruit, the sugars caramelize and the peach flavor intensifies. The result is reminiscent of peach cobbler minus the buttery pastry. Top the warm peach halves with cool creamy maple yogurt, toasted almonds, and fragrant mint. Or, if you’re feeling particularly bold, plop a generous scoop of vanilla ice-cream on the fruit for a satisfying summer dessert.

1 cup organic plain yogurt
3 Tbsp pure maple syrup
3 ripe yellow peaches, halved and pitted
1 Tbsp brown sugar
4 fresh mint leaves, sliced into thin ribbons, for topping
handful toasted almonds, for topping

  1. Mix yogurt. In a small bowl, mix yogurt and maple syrup.
  2. Broil peaches. Sprinkle peach halves with brown sugar and place under broiler. Broil until sugar is bubbly and the fruit is softened and caramelized. Remove from broiler and let cool. Spoon maple yogurt over peach halves, top with toasted almonds and mint ribbons. Serve immediately.
