Don’t let another warm summer day slip by without watermelon granita in your freezer. This icy treat requires three ingredients: watermelon, fresh lime, and a pinch of salt. This recipe is a great way to transform overripe or underripe melons. My only regret about this frozen dessert is not making it sooner!
The how to…
1/2 a whole seedless watermelon, rind removed and cut into chunks
zest of 1 lime
squeeze of fresh lime juice (about 1/4 of a lime)
- Blend. Place watermelon chunks into a blender and puree until smooth. Pour mixture into a 9×13 baking dish and add lime zest, lime juice, and salt. Stir to combine and cover with plastic wrap. Place in freezer.
- Scrape. Freeze for two hours, then using a fork lightly scrape the top frozen layer. Return to freezer. Remove a couple hours later and continue scraping. Repeat the process until the entire mixture is crystalized. Store in freezer until serving.
- Serve. Give the mixture a quick scrape, serve in cups and garnish with a slice of watermelon or a sprig of mint.
*Feeling lazy? Freeze until frozen. Remove from freezer and let sit until slightly thawed, scape with a fork until entire mixture is crystalized.
*Got an underripe melon? Add a squeeze of honey to the mixture.
