Usually, sweet potatoes need nothing more than a hot oven, a generous glug of olive oil and a sprinkle of salt and pepper. For an utterly sublime twist on this side dish, toss sweet potatoes with salt, brown sugar, and mild curry powder. The combo of flavors might seem strange, however the end result is a delicious symphony of sweet and salty with hints of smoke and spice. Out of the oven, add a handful of plump golden raisins, a squeeze of lime juice for brightness and a handful of fresh cilantro.

2 lb sweet potatoes, peeled and cut into 1-inch cubes
2 Tbsp organic virgin coconut oil (melted)
1/2 tsp salt
1 Tbsp brown sugar
2 tsp curry powder (recipe below for homemade mild curry powder)
juice of 1/2 lime
handful golden raisins
handful fresh cilantro, chopped
Homemade mild curry powder
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp turmeric
1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp cayenne
1/4 tsp spanish paprika
*combine spices in a small airtight jar and shake, store until ready to use
- Roast. Preheat oven to 375 degrees. Add sweet potatoes to a sheet pan. Drizzle coconut oil over the potatoes and sprinkle with salt, brown sugar, and curry powder. Toss to coat. Arrange potatoes in a single layer. Roast until lightly browned and tender, about 50 minutes.
- Serve. Remove from the oven and transfer to a large serving dish. Add lime juice, raisins, and cilantro and gently toss. Serve warm.
